陈皮烧鸭

原料:

鸭子一只,陈皮、葱、姜、花椒、盐、八角、糖、料酒、老抽、清水

做法:

  1. 鸭子斩块用清水浸泡 10 分钟再活水冲洗
  2. 把姜葱切片,其它辅料准备好
  3. 油烧三成热,把姜、葱、花椒煸香
  4. 下鸭块翻炒出油来,大概 5 分钟左右
  5. 待鸭子出油后加入陈皮八角继续翻炒
  6. 炒香后加入料酒
  7. 加入糖和老抽,翻炒上色
  8. 加清水没过鸭块即可,大火烧开后转小火慢炖 40 分钟,快好时加盐大火收汁。起锅前加入鸡精调味
